The Ultimate Italian-American Sausage & Peppers Bowl

Sausage and peppers is a classic Italian-American dish. It is said to be the national dish of the immigrants from southern Italy who made their home here in the new world. Our family likes to up the ante with some spicy brown mustard and a side of roasted potatoes and pickles of all sorts (pickled green beans, okra and beets). This is a seriously satisfying dish.

Instructions
Step 1
Preheat oven to 425 degrees Fahrenheit.
Step 2
Place quartered potatoes on a sheet pan and toss with a hearty drizzle of olive oil and 2 generous pinches of salt. Roast potatoes for 25 minutes or until golden brown.
Step 3
While potatoes roast, heat a skillet over medium heat and splash a hearty drizzle of olive oil in the pan.
Step 4
Add the sliced onions and peppers to the pan and saute until soft, stirring frequently so not to burn. Lightly season with salt and pepper.
Step 5
Once onions and peppers are soft, add sausage rounds and cook until done. I like to slightly char mine on each side if time permits.
Step 6
Serve sausage mixture with roasted potatoes. Serve pickled veggies on the side. Spicy brown mustard is a wonderful dip for the sausage.
