Step 1
Pour half of the coconut milk in a large wok pan. Bring to a boil on medium heat and stir until the milk starts separating
Step 2
Stir the curry paste into the milk and boil 2-3 min. until the mixture is fragrant and even. Then add the fish sauce, sugar and lemon grass and stir well
Step 3
Cook until the colour is more intense and slowly add the rest of the coconut milk whilst stirring. Then bring back to a boil.
Step 4
Add the meat and peanuts and cook for 8-10 minutes until most of the liquid has evaporated
