Couscous with Radicchio

Instructions
Step 1
Heat 1 Tbsp olive oil in med. saucepan over med-high heat. Add couscous and stir frequently until grains begin to brown, 3-5 min. Stir in 1 ½ cups water and ¼ tsp salt. Cover, remove from heat, and let sit until couscous is tender, about 7 min.
Step 2
Halve and core radicchio and slice thin. In 12 in. non-stick skillet, heat 1 Tbsp olive oil over med. heat. Sauté radicchio, stirring occasionally, until wilted and beginning to brown, about 1 min. Transfer to serving bowl.
Step 3
Uncover couscous and fluff with a fork. Add couscous, lemon juice, and mint to the bowl with radicchio and toss to combine. Season to taste.
