Instructions
Step 1
Slice the onions as thick as you would like them.
Step 2
Put a big stock pot on the stove and add the olive oil in with the butter adding in directly after. Then add in the onions, salt, pepper, and sugar.
Step 3
Cook and stir (constantly) for about 45 minutes until it becomes caramelized. Add the white wine and boil until jammy.
Step 4
Add the flour and stir it in. Then add the broth, Worcestershire sauce, bay leaves, and thyme. Bring it to a boil and then reduce hit and let simmer for 30 minutes.
Step 5
While simmering, preheat oven to 400 degrees F (204 C). Cut up the bread into one inch pieces and bake for about 10 minutes.
Step 6
Get out a few oven safe bowls, fill with soup, put bread on top, add provolone on top, and then Gruyère on top. Boil on high for 3-4 minutes.
