Step 1
• Pre-heat oven to 220° • Score the pork skin down to the fatty layer, width ways, 1 cm apart • Put pork into oven in a large baking tray and leave for 40 minutes • Turn oven down to 180° and leave for 1 hour 30 minutes • Take the meat out of the oven and turn oven off • Remove the layer of crackling from the meat and cover meat under foil, let rest for 30/45 minutes • Put crackling in the oven to keep warm • When ready to serve, carve the meat into slices and break the crackling into pieces
