Step 1
preheat oven to 350 degrees. Lightly grease and flour bottom center of three 9-inch round cake pans, tapping exess flour. Line bottoms with parchment paper, then grease and flour side of pan, tapping out extra.
Step 2
In large bowl, beat shortening, butter, and sugar, blending until fluffy. Scrape sides and bottom of bowl. Add egg yolks, one at a time, mixing well after each addition.
Step 3
In a separate large bowl, sift together flour, baking powder, and salt. Set aside.
Step 4
In medium bowl, combine milk, buttermilk, cream, and vanilla.
Step 5
In three additions, add flour mixture alternately with milk mixture to creamed mixture. Begin with flour and end with flour, scraping bottom and sides of bowl after each addition. Blend evenly; do not overmix.
Step 6
Using a whisk attachment, whip egg whites until they hold a peak, Using a rubber spatula, gently fold whipped egg whites into cake batter in three additions.
Step 7
Before placing in pans, fold in 3/4 cup of strawberries.
Step 8
Divide cake batter between prepared cake pans. Gently tap pans on counter to level out batter. Bake 22-26 minutes, or until cake tester inserted in the center comes out clean. The top of the layers should bake to a golden color. Cool cake pans on wire rack for 15-20 minutes, then transfer cake to wire rack to finish cooling. brush layers with simple syrup.
