Instructions
Step 1
Cut pork butt into several smaller pieces and rub generously with BBQ rub and liquid smoke.
Step 2
Place pork pieces into the pressure cooker and pour in 1 1/2 cup of vinegar based BBQ sauce over the pork, leaving the remaining sauce for later
Step 3
Seal and cook on HIGH PRESSURE for 60 minutes.
Step 4
Allow the pressure cooker to NATURALLY RELEASE for 15 minutes then continue with quick release
Step 5
Using a strainer with a bowl underneath, dump contents of put into the strainer allowing the sauce drain into the clean bowl below
Step 6
Transfer BBQ from strainer into container and shred BBQ
Step 7
If desired, Pour sauce from bowl and remaining BBQ sauce over the BBQ and toss. Or serve on the side
Step 8
Serve on hoagie rolls or hamburger buns! Or enjoy just on a fork!
