The Doughballs
The Garlic Butter

1 Tbspolive oil
1white onion

8 clovesgarlic
1 Tbsptomato purée
500mltomato passata
1 ½ tspsalt
1 tspdried basil
1 tspcaster sugar
3vine tomatoes
ripe
0.5lemon
The Other Fondue Bits
Instructions
The Doughballs
Step 1
Mix the water yeast and sugar and let bloom for 10 minutes
Step 2
Mix the flour salt and oil and add the yeast mixture and combine
Step 3
Knead for 10 minutes then leave in a bowl covered with cling film for 1 hour
Step 4
Take the dough and cut into 36 pieces (by dividing into 3 then each 3 into 12 pieces)
Step 5
Get each bit of dough and stretch around with your fingers and pinch underneath into balls, these should be 2cm in diameter.
Step 6
Lay these balls onto an oiled tray, cover with clingfilm and let rise for 1-2 hours til doubled in size
The Pizza Sauce

Blend or grate the onion and fry on medium heat in oil for 2 minutes til soft
Step 8
Add the crushed garlic and fry for a further minute before adding the tomato purée for another minute.
Step 9
Add the passata salt sugar and basil and simmer on low for 30 minutes
Step 10
Grate the whole tomatoes and add these in minus the excess liquid as well as the juice of half a lemon, and turn the heat off
Step 11
Taste test and adjust for salt, sugar, and lemon to your liking
The Fondue

Lay all the pizza sauce in a fondue pot or deep pan, and layer in the fresh and low moisture mozzarella with all the chorizo, N’duja and jalapeños , ensuring it’s topped with grated mozzarella, parmesan, salt and pepper
Step 13
Cover with lid and bake at 180C for 25-30 minutes til melty and bubbling
To Finish

Either lay the doughballs on a hot skillet and cook in a pizza oven for 60 seconds, or fry each side in a shallow oiled frying pan for 2 minutes a side, or bake for 8 minutes on max temp
Step 15
Crush the garlic, finely chop the coriander, melt the butter, and combine with the oil, salt and pepper
Step 16
Brush the cooked doughballs with the garlic butter
Step 17
Serve up the doughballs with the fondue
