To store: wrap in foil and freeze (up to 3 months) or put in fridge for up to 4 days

Preheat oven to 185

Cut the sweet potato in half and spray with olive oil and season
Step 3
Bake sweet potato for 45 mins, halfway (around 25 mins) make grooves through the potato
Step 4
Gently heat the butter bean mix until thickened and cooked through
Step 5
When the sweet potato is cooked, add the butter bean mix on top and add extra pesto and a sprinkling of chilli flakes and chopped basil
