Peanut hoisin noodles
Use whatever meat (or tofu, or omit) and veggies you have! I used 1/2 pack of rice noodles or 8 oz but you could use other noodles or serve over rice. Optionally top with crushed peanuts, green onions, cilantro & sriracha.

Sliced vegetables (or use frozen mixed vegetables). Chop garlic and grate ginger. Cube pork into 1” pieces and toss in corn starch. Mix together hoisin, peanut butter, chopped garlic, grated ginger, honey, soy sauce, sesame oil. Add 1 tbsp cooking oil to a hot pan. Sauté pork until browned on all sides then add vegetables of choice (I used mushrooms and red bell pepper). Sauté until desired softness, a few minutes. Soak rice noodles in warm water according to package and drain. Add noodles and sauce into pan and stir to coat and heat through. Serve topped with garnishes of choice. I used green onion, cilantro, crushed peanuts, sriracha and lime.
