Sticky cauliflower wings & dip zero waste

You can use one cauliflower head including the leaves to make this delicious zero waste recipe. I’m literally mind blown by the amazing flavour and texture every time I eat it and I can’t wait to make it again. Serve together with some flat bread , the wings are great with the dip or without! This recipe is multitasking, while you’re baking the cauliflower you can prepare the dip and in 30 min you have a beautiful sharing platter .

Instructions

Step 1
Preparing the wings divide the stem and leaves from the cauliflower head and set aside for the dip recipe. -divide the many tops of the cauliflower to have a “wing”like shape . -prepare the batter mixing together flour,milk,garlic,salt and black pepper until you have a smooth like texture batter. -mix the cauliflower wings in to the batter . -in a different bowl add the panko breadcrumbs and coat the battered wings making sure they are fully covered with crumbreads so that you’ll have a great crunchy texture . -bake them in the oven at 180* for about 20 min if you’d like to have them a bit crunchy in the middle or 30 min for a softer inside. -while baking you can prepare the sticky sauce and dip.
Step 2
Preparing sticky sauce in a pan mix on low heat the soy sauce, maple syrup, water , cornstarch,sesame seeds and ginger until it starts to thicken up. -add the breadcrumbed cauliflower wings and mix with a spoon until completely coated . -garnish with chopped scallions and dip in to the cauliflower sauce. -serve warm
Step 3
Preparing the cauliflower dip blanch the cauliflower leaves and stem -blend all ingredients together until smooth. -taste and add more milk or water if too thick. -garnish with some fresh chilli or herbs
