You'll love this Crumbl Copycat recipe for Peanut Butter Bar Cookies! These extra-large peanut butter oatmeal cookies are topped with a decadent fudge-y buttercream. Easy to make, easy to freeze for later, and completely delicious!

Instructions

Preheat oven to 350°F

Step 1
Line two baking sheets with parchment paper.
Step 2
In lg. bowl, use mixer with beaters to cream together softened butter & sugars. Beat (2-3 min.) until totally combined, smooth, & a bit fluffy.
Step 3
Add peanut butter & vanilla; beat until combined. Add egg; beat until just combined.
Step 4
Sprinkle flour, oats, baking soda, & salt over mixture; beat until just combined. Use spatula to scrape sides of bowl & incorporate any remaining streaks of flour. (Dough will be soft & a bit sticky.)
Step 5
Use a 1/3C scoop to portion 7-8 cookies. Place on cookie sheets at least 3" apart. Lightly pat down tops so they are slightly flattened.
Step 6
Bake cookies (16-18 min.), one sheet at a time, until cookies are lightly crackled on top & edges are just turning golden. (Don't overbake.)
Step 7
Cool on cookie sheets for a few minutes; then transfer to a cooling rack to finish cooling.

Chocolate Fudge Frosting

Step 8
In sm. bowl, slowly melt unsweetened chocolate in micro. until totally melted (use short intervals, about 20-30 sec. & stir in between). Set aside to cool (15 min.)
Step 9
Meanwhile, add butter to lg. bowl; use mixer to beat it until creamy (1-2 min.) Add powdered sugar in sm. amounts, beating it until completely combined & very fluffy (3-4 min.)
Step 10
Add melted, cooled chocolate, cream, & vanilla; beat (1 min.) until combined & fluffy. Optional: add a tiny pinch of salt for more flavor.
Step 11
Spread frosting (3T per cookie) on cooled peanut butter oatmeal cookies; store in fridge.

Notes

Step 12
Unfrosted cookies may be stored at room temp. in an air-tight container (up to 3 days). Frosting can be stored in fridge (up to 3-4 days.) Allow it to come to room temp. (30 min.); beat with hand mixer to re-fluff, & use.
Step 13
Frosted cookies should also be stored in the fridge. I like to allow my cookie to come to room temp. (10 min.) before digging in.
Step 14
Freezing the cookies: Freeze unfrosted cookies or frosted cookies (up to 2 mo.); thaw in fridge. (Do not re-freeze.)

The chocolate buttercream recipe is slightly adapted from my very favorite recipe from Smitten Kitchen. I’ve made it countless times and it’s just the best.
