Potato peels are an often looked over as a food waste product in the kitchen, here I try and use these leftovers for good in a low calorie but tasty snack. These super crunchy peels provide a filling munchie or even a great topping for soup, you’ll wonder why you haven’t been doing it for years!

Instructions
Step 1
Preheat the oven to gas mark 7 and prepare, preferably, a flat baking tray.
Step 2
Wash the potatoes well before peeling and once peeled either lay in a colander or in between two kitchen towels before dabbing them dry.
Step 3
Place in a small mixing bowl adding oil spray*, sea salt flakes and black peppercorns.
Step 4
Place them onto a baking tray and in the oven for around 20-30 minutes or until golden and crispy.
Step 5
Finally serve immediately with a sprinkle of extra sea salt if required.
