Fluffy pancakes, topped with fresh lemon juice, lemon whipped cream, zingy lemon drizzle, and fresh lemon zest. These are so yummy! If you don’t like as much ZING you can skip the fresh lemon juice on top of the pancakes.

Instructions

FOR THE LEMON WHIPPED CREAM

Step 1
In a medium bowl, whisk together the cream cheese, lemon juice, icing/powdered sugar and lemon zest. Set aside.
Step 2
In a separate bowl, whisk the cream until stiff peaks form. Fold the whipped cream into the lemon/cream cheese mixture.

FOR THE LEMON DRIZZLE

Step 3
Whisk the lemon juice, icing/powdered sugar and cream until smooth. Adjust with more icing sugar or lemon juice to suit the drizzling consistency you’d like!

ASSEMBLING THE LEMON DRIZZLE PANCAKES

Cook your pancakes as you'd normally do - I'd recommend one to two pancakes per portion, depending on their size. Top the pancakes with a good squeeze of fresh lemon juice. Add a scoop of the lemon cream on top of the pancakes, sprinkle on a little lemon zest and then drizzle with the lemon drizzle mixture. Garnish with a twist of lemon if you'd like and enjoy!
