Stuffed Salmon Bites Skewers

Ingredients

For the filling
10 ozbaby spinach
0.5onion
small, diced
1sausage mango jalapeño
Chicken
oil
as needed
Montreal steak seasoning TT
White pepper
TT
1 Tbspgarlic powder
Red chili pepper flakes
TT
Cayenne pepper
TT
0.5chicken bouillon tablet
crushed
0.5lime
Juice
2 spoonsCream Cheese
Parmesan reggiano
freshly grated as needed or TT
For the Salmon
Instructions
Step 1
Start off by sautéing the Sausage, once it begins to brown add the onions
Step 2
Add sausage and onions to the spinach; seasoning with all these the ingredients listed below

Red chili pepper flakes
Cayenne pepper

Step 3
Mix in really well and set aside
Step 4
Gently cut a small pocket coming from the thicker side of the salmon; be careful not to go to deep or too wide . Season with the creole seasoning if you choose but be careful we’re already using lots of sodium

Stuff the salmon with filing then carefully stick the skewers in . Max 3 bites per skewers if using regular skewers.
Step 6
Using a large pan on medium heat add the oil and allow it to get hot ; once it’s hot add the salmon skewers is . DO NOT sear on the stuffing side !
Step 7
Once you get a nice sear on your salmon add the butter and baste. Lower heat to low and cover with a lid and allow it to finish cooking .
Step 8
Serve with rice or eat with Naan bread or tortilla
