Marinated Chicken
1.5 lbschicken breast

¼ cupplain whole yogurt
2 tspsfresh ginger
minced
1 Tbspfresh garlic
minced
2 Tbspgaram masala
1 Tbspground coriander
1 ½ tspcumin
2 tspscayenne powder
2 tspssalt
½ Tbspturmeric
Butter Chicken Sauce
3 Tbspvegetable oil
¼ cuptomato paste
½ cuptomato sauce
1 cupheavy cream
⅓ cupunsalted butter
1 Tbspsugar

Instructions
Step 1
Cube chicken breasts - smaller is better. Add to large bowl. Prepare fresh ginger and fresh garlic.
Step 2
In large bowl, mix together cubed chicken, ginger, garlic, garam masala, coriander, cumin, cayenne, and salt. Mix together, let marinade for at least 1 hour.
Step 3
In a large pan, add 1 tbsp of oil. Cook chicken on high heat until it has some browning and is cooked through. Do not overcook chicken - it will continue to cook later in sauce.
Step 4
In a separate large saucepan, add 2 tbsp of oil and heat on med-high. Add tomato paste, cook for 3-4 minutes until it darkens in color.
Step 5
To saucepan, add tomato sauce, heavy cream, butter, and sugar. Whisk until smooth.
Step 6
Add chicken to sauce. Mix and taste, adjusting if necessary.
Step 7
Garnish with chopped cilantro and a yogurt drizzle. Serve over rice with side of naan.
