Chicken Tikki Masala

Masala Paste
1 Tbspcoriander seeds
½ tspcumin
1 tspturmeric
2 inchginger
7cloves garlic
4pimento peppers
¼ cupwater
1 Tbspgaram masala
1 Tbspred pepper
2 Tbspoil
Chicken Marinade

Instructions
Step 1
In a blender add all the Masala Paste ingredients and blend as fine as possible
Step 2
Cut chicken thighs into bite-sized chunks
Step 3
In a bowl mix together all the ingredients for the chicken marinade, add the cubed chicken and stir until well-coated.
Step 4
Transfer to a zip lock bag and marinate in the fridge for at least 2 hours but preferably overnight for ultimate flavor (just trust me🙈).
Step 5
Heat oil in a large skillet over medium-high. Sear chicken on both sides, 3-4 minutes per side. Set to the side once done.
Step 6
In the same pot, reduce heat and saute your diced onions with butter.
Step 7
Add the remaining Masala Paste along with paprika and black pepper powder. Stir until the paste starts sticking to the pan.
Step 8
Pour in the tomato puree and let simmer for about 10-15 minutes, stirring occasionally until sauce thickens and becomes a deep brown-red color.
Step 9
Add in the heavy cream and mix until thoroughly combined.
Step 10
Add the chicken (and its juices🤤) back into the pot and cook for an additional 10-12 minutes until the chicken is cooked through and the sauce is thiCCC and bubbling.
Step 11
Season to taste with salt and plate with some fluffy steamed rice or buttery garlic naan. Garnish with chive, take a few pics for the gram and serve.
