Step 1
1. Melt the butter in a skillet on medium heat. Add the flour when just melted.

2. Cook the roux for about 2 minutes, or until ready, then add heavy whipping cream and milk, and whisk. Continue stirring until thick.

3. Add the seasonings, stirring the mixture and tasting. Add more to achieve desired spice and taste.

4. In a separate bowl grate the cheese. Add to the mixture and stir. Turn off heat to prevent separation while cooking. Stir the cheese entirely into the mixture. Consistency should be creamy and thickening.
Step 5
5. Add cooked pasta and stir for 1-2 minutes. Add more seasonings to taste and serve.
