Instructions

Step 1
Preheat oven to 375°
Step 2
Slice all vegetables into thin slices, 1/8” thick, with a knife or mandolin
Step 3
In an 8x8” square or round baking dish add the marinara sauce to the bottom. Add extra seasoning as desired. Arrange the vegetables in alternating order around the dish, standing upright, starting on the outside working in.
Step 4
For example, zucchini slice, squash, onion, tomato, eggplant, then repeat.
Step 5
Drizzle the top with olive oil and season with the Italian seasoning and more salt and pepper.
Step 6
Cover and bake for 30 minutes. Uncover and bake an additional 10 minutes until veggies are soft.
Step 7
Serve as a side dish or on top of pasta or with a baguette
