Mamas Homemade Kubbeh (authentic)

Kubbeh is a family of dishes based on spiced ground meat, onions, and grain, popular in Middle Eastern cuisine. In Levantine cuisine, kubbeh is usually made by pounding bulgur wheat together with meat into a fine paste and forming it into balls with toasted pine nuts and spices.

Instructions

Step 1
Soak burgul in water for half an hour
Step 2
Meanwhile prepare stuffing mixture
Step 3
Drizzle pan with olive oil, sauté onions, then add meat and spices.

Drizzle pan with olive oil and toast pinenuts. Add to meat mixture and set aside to cool

Dough

Step 5
Run burgul meat and onions through meat grinder (smallest attachment)

Run the mixture twice! Very important for the best kibbeh dough

Add salt and white pepper and knead by hand very well! (add water if dough seems dry)
Step 8
Form though dough into balls using both hand to open like a cup and stuff with meat mixture. Close it and form into football shapes (Using water to smooth it out)
Step 9
Freeze for For up to 6 months or fry right away
Step 10
Make sure oil is very hot on medium high heat
Step 11
Fry until golden
Step 12
Serve right away (The stuffing is OMG delicious on its own and can be eaten over yellow rice)
