Instructions
Step 1
Cut potatoes into 1 inch cube-like pieces
Step 2
In a pot with salt, boil water on medium-high heat. Once boiling, add potatoes and boil until soft (approx. 15-20 mins)
Step 3
Preheat oven on bake at 480 degrees.
Step 4
Drain the potatoes in a colander and air-dry for a bit
Step 5
On a stovetop pan, heat some oil until hot. Once hot, transfer to a baking dish and then add the potatoes.
Step 6
Bake in oven for 15-20 mins at 480 degrees until crispy (top rack cooks faster). Change to broil for another 15-20 mins until crispy
Step 7
Take the potatoes out, discard the excess oil and then toss in desired toppings (rosemary, Parmesan, red pepper flakes)
