Chipotle “beef” burrito bowl 🍚🥬

To all those new here, you’ll get to know that this is my favouritee meal. Heres another variation of a Mexican burrito bowl! This one is veggie, using @quorn_uk mince and still packed with protein.

Instructions

Step 1
slice the onion and fry until soft - then add the Ouorn mince and cook for about 2-3 minutes to soften
Step 2
Add the harissa paste, salt, and pepper - add a splash of water if it is looking too dry! Cook for 8-10 minutes
Step 3
To make the salsa, dice the tomato, slice the spring onion and combine with the sweetcorn
Step 4
cook the rice in the microwave
Step 5
once the quorn is cooked, add everything to a bowl- top with smashed avocado
