Chimichurri Steak with Oven Fries

Instructions

Preheat Oven

Step 1
Preheat oven to 450°F with 2 rimmed baking sheets on racks in the upper and lower thirds.

Prep Oven Fries

Step 2
Scrub potatoes, then cut lengthwise into ¼-inch fries.

Roast Oven Fries

Step 3
In a large bowl, toss fries with 3 tablespoons oil and a pinch each of salt and pepper. Carefully divide fries between preheated baking sheets. Roast until tender and golden brown, switching pans and flipping fries halfway through cooking time, about 30 minutes.

Cook Steak

Step 4
When fries are halfway done, pat steaks dry and season all over with salt and pepper. Heat 1 tablespoon oil in a large skillet over medium-high. Cook steaks until well browned and medium-rare, 2–3 minutes per side (or longer for desired doneness). Remove skillet from heat and let steaks rest for 2 minutes.

Serve

Step 5
Thinly slice steaks, if desired. Serve steak with chimichurri sauce spooned over top and oven fries alongside. Enjoy
