Instructions

Step 1
Microwave 1 teaspoon oil, garam masala, and coriander in medium bowl until fragrant about 30 seconds.
Step 2
Whisk lemon juice, honey, salt, and pepper into spice mixture until combined.
Step 3
While whisking constantly, drizzle in remaining 3 tablespoons oil until combined.
Step 4
Toss romaine, watercress, parsley, and shallot with half of vinaigrette to coat, then season with salt and pepper to taste.
Step 5
Divide among individual serving bowls, then top with chicken, chickpeas, and apricots.
Step 6
Drizzle with remaining vinaigrette.
