Step 1
Preheat oven to 350 degrees. Line a baking sheet with parchment paper or silicone mat.

In a large bowl toss the oats, walnuts, pepitas, salt, cinnamon and ginger.
Step 3
In a large measuring cup, combine the coconut oil, applesauce and vanilla. Pour over the dry mixture and mix well.
Step 4
Transfer the mixture to the prepared baking sheet. Cook for 30 minutes, stirring about halfway through. Remove from the oven and let the granola sit undisturbed until completely cool. Break the granola into pieces, and stir in the dried cherries.
Step 5
Transfer to an airtight container and store at room temperature for up to 2 weeks.
Step 6
Option Tip: For a higher protein granola, mix in up to 1/2 cup hemp seeds or flax seed after cooking along with the cherries.
