Preheat oven to 190C

Peel the squash and slice it(about 1-1.5cm thickness )

Scoop out the seeds, and using the nozzle for the piping bag cut out the centre from seedless slices (optional)

Whisk the egg white until soft peaks and brush the slices (both sides) with it.

In a bowl mix cinnamon and sugar and dip in the butternut squash slices, so they cover on both sides.

Unfold the puff pastry and slice it into 2cm strips.

Wrap the butternut squash slices with puff pastry strips and transfer them to the baking tray, lined with parchment. Continue until you finish all pastry.

Mix egg yolk with milk and brush the buns.

On another tray lined with parchment place the slices without the pastry.

Bake for 25-30 minutes or until golden.

When ready, drizzle the honey over the baked butternut squash and sprinkle the cinnamon on top of the buns.
