Step 1
place all ingredients for the sauce in a food processor with 50ml
Step 2
Blitz until smooth. Add salt and pepper to taste.
Step 3
Heat some oil on a medium-sized pan.
Step 4
Add the medallions, chorizo, onion and sun-dried tomatoes tothe pan and fry until lightly browned
Step 5
Bring a pot of water to the boil and cook the spaghetti for 12-15 minutes.
Step 6
Drain the spaghetti. Pour the spaghetti onto the pan with the chorizo, bacon, onion and tomatoes, pour over the creamy avocado sauce and mix.
Step 7
Season with chilli flakes, salt and pepper and garnish with fresh coriander.
