Instructions
Step 1
Cook pasta in a pot of boiling salted water, stirring occasionally, until very al dente, about 2 minutes less than package directions. Save pasta cooking liquid for later.
Step 2
In a large pan over medium-high, add mushrooms (no oil, no butter) and cook until the juice from the mushroom evaporates for about 3 minutes. Transfer mushroom to a plate, and set aside.
Step 3
In the same pan, cook bacon until brown. Add garlic, sautee until lightly brown.
Step 4
Return mushroom, add heavy cream, cheese, and add 1/4 cup pasta cooking liquid, bring to a simmer.
Step 5
Add pasta, season with salt and pepper, coat it with the sauce. Check and adjust the taste and density as you like.
Step 6
Add red pepper (optional), and serve.
