Start cooking rice
Step 2
Heat cooking oil in large pot; add onion, ginger, garlic. Saute 3-5 mins until onion becomes translucent

Add peppers & carrot and sauté another 3-5 mins til softened

Add curry paste and cook 1-2 mins
Step 5
Add coconut milk, veggie stock, tofu; bring to a boil, then reduce to a simmer; cook 5-10 mins based on taste.
