Instructions
Step 1
Slice the steak against the grain so you have thin strips (they will be going on skewers).
Step 2
Crush peanuts into small pieces in a bag filled with paprika, onion powder, ginger, pepper flakes, and garlic powder. Get the peanuts as small as possible. This would ideally be done with a food processor, but we do not have one at this time.
Step 3
Place the beef in a large bowl or shallow dish. Drizzle with oil; sprinkle with salt. Toss to coat. Add peanut mixture; turn to coat. and seasoned peanuts. Let rest in refrigerator, covered, for 2 hours.

Dice the onions and tomatoes.
Step 5
After refrigeration, drain the beef and discard the marinade. (There will still be peanuts on the meat!)
Step 6
Thread the beef onto metal skewers. Cook on medium-high heat on grill, covered, until the beef reaches your desired doneness (about 10-15 minutes). Turn occasionally while cooking.

While the meat is grilling, sautee the onions and tomatoes on the stove.
Step 8
Serve the skewers and veggies together and garnish with cilantro as desired.
