Instructions
Step 1
Pre-heat the oven to 180°C or 350°F fan-forced.
Step 2
Line a baking tray with baking paper.
Step 3
Place the cauliflower florets or sweet potato on the baking tray.
Step 4
Drizzle over sea salt and about 1 tbsp olive oil or coconut oil.
Step 5
Place in the oven for 25-30 minutes.
Step 6
Add another 1 tbsp of olive oil or coconut oil in a frying pan over medium heat.
Step 7
Sauté the chopped kale in the pan.
Step 8
Season with Cajun spice, curry powder or sesame seeds.
Step 9
Remove the cauliflower or sweet potato from oven.
Step 10
Remove the kale from the pan.
Step 11
To make the sauce, mix the ingredients in a bowl.
Step 12
To serve, plate up cauliflower, protein of choice, vegetables and drizzle the creamy sauce.
