Mushroom “meat“ topping
150gshiitake mushrooms
2 Tbspsesame oil
2scallion
whites
2garlic cloves
1 Tbspsoy sauce

Instructions
Step 1
Add garlic, chili flakes, sesame seeds and Sichuan pepper to a heat-proof bowl. Heat up the oil (don’t let it smoke) and pour it over the spices. You can also use homemade chili oil and skip this step. Add the remaining ingredients for the sauce and stir to combine.
Step 2
Prepare the mushroom topping. In a hot pan sauté mushrooms until the water has evaporated and they have got some good browning. Then add the scallions, cook for a few more minutes, then add the garlic and season to taste.
Step 3
Blanch the bok choy or other greens of your choice.
Step 4
Cook the noodles according to packaging.
Step 5
Mix the noodles with the sauce, top with the mushrooms, bok choy, scallion greens, more chili oil and crushed peanuts. Enjoy!
