Apple, fennel & Swiss pizza

Inspired by Michelle Nolker! Recipe makes twice as much roasted apples and fennel as you need. The rest makes a great addition to sandwiches or topping for roasted chicken.

Instructions

Step 1
Heat oven to 425 F.
Step 2
Melt butter in an oven-proof skillet. Briefly sauté shallot, apples and fennel. Roast in the oven for 15 minutes, or until lightly carmelized.
Step 3
Gently stir mustard and vinegar into roasted apples and fennel. Season with salt and pepper.
Step 4
Shape pizza dough. Spread half the apple and fennel mixture over the dough, and top with the two cheeses. Bake for 15 minutes, or until crust is crisp and cheese is bubbling.
