A rich Creamy Cheese that’s so easy to make and rich in probiotics !I love to spread mine on toast and bagels .

Instructions
Step 1
Put a strainer over a large bowl then put a cheese cloth or muslin cloth over the strainer then pour in the kefir .
And cover with the cloth. Let the whey drip out for about an hour


Step 2
Keep the whey and use it in smoothies as it’s rich in probiotics . Next gently squeeze out any excess liquid then get a sting and tie it around the cloth then tie it into something like a high cupboard and place it over a the bowl. The weight of it hanging will force the rest of the whey out . Let it hang over night and in the morning you should be left with delicious rich ricotta type spreadable cheese . You can add some salt if you like or even herbs . Place in an airtight container and keep in the fridge for up to a week and enjoy
