Chicken on a stick, in some pineapple, doesn't really taste any better than this

Ingredients

Marinade
½ cuppineapple juice
2 Tbspsriracha
1 Tbspginger
grated
1 Tbspgarlic
grated
2 Tbspketchup
2 Tbspsoy
1 Tbspbrown sugar
2 Tbspsoy sauce
1 Tbsprice vinegar
1 Tbspchinese cooking wine
½ Tbspsesame oil

Instructions
Step 1
Get 2 pineapples, cut in half and carve out the centres so you have created 4 mini bowls. Saving the insides for the skewers and the marinade
Step 2
Marinade the chicken and set aside for as long as you have patience
Step 3
Skewer the chicken. I chose to go a layer of chicken, then the veg, then the chicken, then pineapple followed by some more chicken
Step 4
If you have an outdoor grill then grill this until ready but if not place them onto an oven dish and cook for 25-30 minutes in the oven, occasionally brushing with the marinade and rotating when necessary
Step 5
Serve with some rice in the pineapple bowls. Enjoy!
