Ingredients
4 servings

2chicken breasts
large, cooked and shredded

16 ozfresh cauliflower florets
ends removed and roughly chopped into smaller pieces

1onion
chopped

1 cupbell peppers
chopped

1can green chili
diced

½ cupSalsa Verde
low-sugar, + a bit more for extra flavor, I really like the flavor of Sam's Choice Salsa Verde

¼ cupgreek yogurt

2cloves garlic

1 tspgarlic salt

1 tspblack pepper

Cheddar Cheese
Shredded, for sprinkling on the top, for added color
Instructions
Step 1
Shred cooked chicken and place in large mixing bowl.
Step 2
Steam or microwave cauliflower until barely fork tender. Remove excess liquid and set aside. If you have a colander, place cooked cauliflower in colander and let it drain while you're preparing the rest of your ingredients together.
Step 3
Sauté onion and peppers until onions are cooked, about 10 minutes. Add onions, peppers, garlic and cauliflower to mixing bowl.
Step 4
Preheat oven to 375 degrees F.
Step 5
Reserve 1/4 cup cheddar cheese for topping. Add all remaining ingredients (salsa, cheese, spices, Greek yogurt, green chili’s to bowl and mix gently (don’t want to smash cauliflower).
Step 6
Add mixture to a 9x13 oven safe dish. Sprinkle the remaining 1/4 cup cheese to top of casserole and bake uncovered for 25 minutes.
