Instructions
Step 1
In a large bowl combine kefir and baking soda. Mix well and set aside for 10 minutes.
Step 2
Meanwhile, peel potatoes and cut them into cubes. Add to the pot with water and salt and boil until ready.
Step 3
Add salt, sugar and egg yolks to the kefir mixture. Whisk together and add flour. Start kneading in the bowl, then transfer to the work surface, dusted with flour, and continue kneading for 6-8 minutes. Add more flour if needed. Knead the soft and elastic dough. Cover with the towel and let it rest for 30-40 minutes.
Step 4
In a skillet heat 1tbsp oil and butter. Add chopped onion and brown it. Then stir in black pepper and paprika.
Step 5
Add onion mixture to the drained potatoes, followed by 2tbsp dill and mash the potatoes.
Step 6
Back to the dough. Lightly knead the dough, form a log and divide it into 14 equal pieces. Each piece roll into a ball then rolls out into a disk. Place 2 tsp of the filling in the middle and pinch to close. Slightly flatten and fry in hot oil from both sides (sealed side down first) until golden brown.
