1 tablespoonwhite sugar

Instructions
Step 1
In a medium bowl, add sugar, yeast, and warm milk (not hot) until combined, and set it aside in a warm environment for it to blossom.





Step 2
Add dry ingredients except for salt (remember to sift), butter, and the yeast mixture in a stand mixer bowl. Mix until incorporated and then add salt. Knead on medium speed, then high until the dough forms together (alternatively knead by hand for 8 minutes).






Step 3
Lightly oil the edges of a large bowl, form a circle with the dough, and place the dough inside. Cover the bowl with a tea towel (or cling wrap) and place it in the oven (not on) and let it rise for 2 hours (can be more than 2 hours, up to you).

Step 4
Combine butter, both sugars, cinnamon and salt into a small bowl and mix until incorporated.







Step 5
Knead the dough for 3-5 minutes and roll it out into a rectangle about 3cm thick (you can adjust thickness but the dough will rise). Spread the cinnamon filling across the whole dough. Tightly roll the dough (horizontally/the long side of the rectangle) into a roll.


Step 6
Cut the cinnamon rolls into your desired sizes (use a sharp knife, floss, or string so it easily glides through the dough and doesn't misshapen the rolls).

Step 7
Preheat oven to 180°c

Step 8
Spray a rectangular baking tray (around 34cmx24cmx6cm) with oil spray and line with baking paper. Place the cinnamon rolls in rows (leave 3cm gaps between each roll because they'll rise) and cover with cling wrap. Let the dough rise for 25 minutes.




Step 9
Bake for 30 minutes or until they are golden brown (adjust times depending on your oven) and rotate the tray when 15 minutes pass.

Step 10
Take it out of the oven and allow it to rest for 10 minutes.
Step 11
Add toppings of your choice.

In a medium bowl, combine icing sugar (sifted), vanilla, and milk. Mix until combined. Drizzle over the cinnamon rolls.
