Step 1
Combine the garlic, ginger, 1 tbsp oyster sauce and 2 tsp soy sauce in a large non-metallic bowl. Add the chicken, toss well, cover with plastic wrap and marinate in the fridge for 30 minutes.
Step 2
Soak the noodles in boiling water for 6-7 minutes, or until soft. Drain.
Step 3
Heat a wok over high heat, add the oil and swirl to coat. Stir-fry the chicken until browned. Add the celery, carrot and half the spring onion, and stir-fry for 2-3 minutes, or until slightly softened. Add the curry powder and stir-fry for 2 minutes, or until fragrant.
Step 4
Toss in the noodles, stir in the remaining ingredients (40 mL oyster sauce, 55 mL soy sauce, sesame oil, half the spring onions, bean sprouts) and serve.
