Quick and Easy Fried Rice

Easy weeknight meal.
For added flavour add minced garlic in step one and top with chilli or shallots in step 4.
You can swap out the prawns for tofu or 500g of chopped or shredded store bought BBQ chicken to keep the meal quick and easy.

Step 1

Heat rice following packet directions.
Meanwhile, heat a large frying pan over medium heat. Spray with oil, add prawn meat and cook for 2 minutes.


Step 2

Add vegetables, cover and cook for a further 1 minute. Add heated rice and soy sauce and toss to combine.


Step 3

Spray a second frying pan with oil. Fry eggs for 3 minutes, or until cooked to your liking.


Step 4

Spoon fried rice into shallow bowls. Top with egg, season and serve.
