1.5 lbflank steak
sliced against the grain, or ribeye steak, tenderloin, strip loin, strip steak
1.5 lbbaby yellow potatoes
quartered
1 Tbspolive oil
3 Tbspbutter
divided
5garlic cloves

1 tspfresh thyme

1 tspfresh rosemary
chopped
1 tspfresh oregano

Instructions
Step 1
To prepare the garlic butter steak recipe with potatoes wedges: In a large bowl, combine the steak strips with soy sauce, olive oil, pepper, and hot sauce. Set aside and allow steak strips to marinate while you cook potatoes.
Step 2
In lg. skillet over med.-high, mix 1T olive oil & 1T butter. When butter is melted, add potatoes wedges; cook (4 min.), stir, & cook (4-5 min. more) until potatoes wedges are golden & fork-tender. Transfer sauteed potatoes to plate & set aside.
Step 3
In same skillet over med.; add remaining 2T butter, garlic, red chili pepper flakes, & fresh herbs. Lay steak strips in one layer, keeping drained steak marinade for later. Cook steak strips (1 min. per side), until nicely browned – adjust timing depending on how you like your steak.
Step 4
Right before steak is done, stir in reserved marinade & cook (1 min.). Add potato wedges back to pan & heat through. Adjust seasoning with salt & pepper as necessary.
Step 5
Remove from heat & serve immediately, garnished with more crushed chili pepper, fresh herbs, & a sprinkle of parmesan cheese over the potatoes. Enjoy!
