There are so many ways to cook couscous that you probably wouldn't have thought of. Here I'm roasting it in the oven. Ordinarily, this would be a bit risky, but the tomatoes give an extra burst of liquid, ensuring your couscous remains soft while getting a little crunchy on top.

Step 1
Preheat your oven to 190°C/gas mark 5.
Step 2
Dissolve the stock cubes in the hot water. Grab a roasting tin, tip in the couscous and pour in the stock. Place the feta and tomatoes on top, sprinkle with oregano, drizzle with a generous glug of olive oil and season with salt and pepper. Roast in the oven for about 20 minutes, then serve.
