Spinach and Mozzarella Tortellini

Instructions

Step 1
1. In a large pot on high heat, add the olive oil, butter, bay leaves, thyme and chicken broth. Bring to a boil, and cook for another 7 minutes. Strain, then place back into the pot and return to a boil. Add the tortellini and cook in the stock for 5 minutes.
Step 2
2. Remove from heat, add spinach, and let it cook off heat for 3 minutes. Adjust seasoning with salt and pepper, drizzle with extra virgin olive oil, and serve in bowls with grated cheese on top.
