Instructions
Step 1
(A) Put prawns in like warm water to defrost. (B) Soak the rice noodles for 15-20 mins in room temp water (very tepid). Hot water causes starch to be released that results in stickiness.
Step 2
While noodles are soaking fry the tofu. Efficient to fry a full Extra Firm pack at once and use over several meals. Cut it into cubes. Put in bowl. Add 1/4 tsp Chilli flakes, 1/4 tsp salt and then mix by hand. Then spray in 10 sprays of olive oil while continuing to mix by hand to coat. Fry in saucepan with 1 tbsp of veg oil (heat at 8). Make sure not to burn tofu. Doesn't need long. Controlled turning to get each side evenly.

Prep peanuts, lime and chive

START WITH PAN HEATED TO MEDIUM HEAT
Step 5
Cook the semi-scrambled eggs very quickly (30s) [If prawns are frozen do those first]
Step 6
Add the prawns to the half-cooked eggs for another minute until they are cooked
Step 7
Add the rice noodles from the warm water. You want there to be oil and pad Thai sauce in the pan already (to coat noodles and stop sticking). Experiment with removing all ingredients in pan while putting in the noodles so you can stir and coat needles easily. (see step 1)
Step 8
Stir around for another 30 seconds to a minute
Step 9
TURN UP TO HIGH HEAT
Step 10
Add Pad Thai sauce (with a little dark soy sauce mixed in)
Step 11
Stir everything around and cook for another minute
Step 12
Pour out onto plate and then add the peanuts, the fried tofu chunks, the dried turnip, chives and the bean sprouts
