Instructions

Step 1
Preheat the oven to 350°F.

Oil a 12-cup muffin pan with coconut oil or line it with unbleached paper liners.
Step 3
Whisk together the dry ingredients in a medium mixing bowl.
Step 4
In a separate bowl, whisk together the wet ingredients.
Step 5
Pour the wet ingredients into the dry and vigorously mix together using a wooden spoon.
Step 6
Immediately fill about three quarters of the way full with the batter.
Step 7
Bake for 20 to 25 minutes.
Step 8
Cool on a wire rack.
