Sauce
2 ½ tablespoonsdark soy sauce
2 tablespoonsoyster sauce
1 tablespoonmirin
2 teaspoonbrown sugar
½ teaspoonrice vinegar

Instructions
Step 1
Marinate the beef strips for 10 minutes in a tablespoon of dark soy sauce
Step 2
Cook the udon noodles for 2min in boiling water and then pour cold water over them to firm them up
Step 3
In a bowl, combine the ingredients for the sauce
Step 4
In a saucepan, over high heat with a little oil, sauté the beef for 5 min then set aside.
Step 5
Sauté the garlic for 2 min until it browns.
Step 6
Add the onion and white parts of the cabbage, sauté 5 min
Step 7
Add the green parts of the cabbage and the green onions, sauté 2 min
Step 8
Add the noodles and meat, sauté 3 min
Step 9
Add the sauce and reduce while stirring for 5 minutes (to get the best flavor, reduce it almost completely so might need more than 5 minutes depending on your stove
