Caribbean lamb with butterbeans

Instructions

Step 1
Cut the meat into 5cm/2in cubes, discarding excess fat and any gristle. Place it in a large bowl.
Step 2
Add the curry powder, garlic, onion, thyme, bay leaves, allspice and oil. Mix well, then cover the bowl and place in the refrigerator. Marinate for at least 3 hours or overnight.
Step 3
Melt the butter or margarine in a large heavy pan. Add the seasoned mutton or lamb and fry over a medium heat for about 10 minutes, turning the meat frequently.
Step 4
Stir in the stock or water and chilli, and bring to the boil. Lower the heat, cover and simmer for 1½ hours or until the meat is tender. Add the butterbeans 15 mins before the end of cooking time. Garnish with coriander and serve with rice.
