Instructions
Step 1
1. Place chocolate in a bowl with 30ml (2 tbsp) water and melt over a saucepan of hot water.
Step 2
To microwave: Place chocolate in a bow with 30ml (2tbsp) water and cook on MEDIUM (50%) for about 2 minutes, stirring occasionally, until melted.

2. Blend flour with a little cold milk to make a smooth paste.

3. Heat remaining milk with sugar.

To microwave: Heat remaining milk with sugar for 1½ minutes.

4. Mix hot milk with melted chocolate then pour onto flour paste, stirring to mix.

5. Return to pan and bring to the boil, stirring.

To microwave: Cook for 2-2½ minutes, stirring frequently, until sauce boils and is very thick. Stir well.

6. Cook for 2 minutes, stirring occasionally.

To microwave: Cook for 30 seconds.

7. Remove from heat, stir in butter and cool slightly,

8. Stir in egg yolks.

9. Whisk egg whites to a stiff snow and gently fold in to chocolate mixture.

10. Transfer to a well greased 1.1 litre (2 pint) soufflé dish.

11. Bake at 200°C (400°F) Mark 6 for 35 minutes until well risen with a high crown.
Step 16
12. Dust with icing sugar and serve immediately.
Hazelnut Or Walnut Soufflé
Step 17
Follow recipe and method for chocolate soufflé (left) but omit chocolate. Add 75g (3oz) finely chopped hazelnuts or walnuts before beating in egg yolks.
Coffee Soufflé

Follow recipe and method for chocolate soufflé (left) but omit chocolate. Add 15ml (1 tbsp) instant coffee granules to hot milk.
Banana Soufflé
Step 19
Follow recipe and method for chocolate soufflé (left) but omit chocolate. Add 2 smal bananas, mashed with 10 ml (2 tsp) lemon juice before beating in egg yolks.
