ABC Soup

6 cups chicken stock

2 potatoes cut into cubes

150 gramspork belly

1/2 tbsp white peppercorns pounded lightly (optional)

Instructions

Step 1
Put chicken carcasses, anchovies and water in a pot. Once boiling, skim off scum, foam and fat that has floated to the top. Simmer for 1 hour.

Step 2
Put all ingredients and chicken stock(4 - 6 cups) in a pot. Bring it to a boil and simmer for 45 minutes. Add light soy sauce and pepper(omit if using peppercorns) according to taste.
