Vegetable and Tofu Soup

Instructions

Step 1
Cut tofu into cubes
Step 2
Chop carrots, onions, and potatoes
Step 3
Slice mushrooms
Step 4
Add oil to sauce pan and add mushrooms and tofu until tofu is golden on med-high heat (you might need to separate them to start)
Step 5
Add onions and lower the heat and cook for a few minutes
Step 6
Add carrots, potatoes and vegetable stock
Step 7
Bring to boil and let simmer for 20 minutes
Step 8
Season with salt and pepper
Step 9
Add peas and let simmer for a few more minutes
Step 10
Add parsley before serving
